Baked Goat Cheese Dip

This baked goat cheese dip has all of the ingredients that low-carb eaters love, including cream cheese. It’s become my second favorite appetizer to make, ever since mastering the spinach and artichoke dip in the Crock Pot. I think you’ll love it, too — especially since each serving has only two total carbs.

This cheese dip is so easy to bake. You’re just blending all of the ingredients, adding it to a baking dish and popping it into the oven for 15 minutes. From start to finish, this appetizer is ready in about a half hour — great if you’re having last-minute guests over for dinner or you need it for a potluck. It’s an impressive dish to serve or bring to a friend or family member’s get together.

Ingredients

  • 8 ounces goat cheese
  • 1/2 cup cream cheese
  • 1/4 cup plain Greek yogurt or sour cream
  • 1 clove garlic minced
  • 1 tablespoon olive oil
  • 1/4 teaspoon dried rosemary
  • 1/4 teaspoon dried thyme
  • salt to taste
  • black pepper to taste
  • 1 teaspoon honey to garnish
  • 3 tablespoons walnuts or almonds chopped, optional as a topping

Step-by-Step Directions

  1. Preheat the oven to 350 F.
  2. In a bowl, mix the goat cheese, cream cheese and Greek yogurt or sour cream until smooth.
  3. Add the minced garlic, olive oil, rosemary/thyme, salt and pepper. If you prefer a touch of sweetness, stir in 1 teaspoon of honey.
  4. Transfer the mixture to a lightly greased small, oven-safe baking dish.
  5. Bake for 15-20 minutes, until the top is slightly golden and creamy.
  6. Remove from the oven, sprinkle with nuts and drizzle with more honey if desired.
  7. Serve with low-carb bread or crackers such as flaxseed crackers.
