No Mayo Broccoli and Bacon Salad

This lightly dressed, chilled broccoli and bacon salad is excellent for picnics, potlucks, and casual get-togethers. The mayonnaise-free dressing, with fresh lemon juice and zest, adds a boost of bright flavor, while the crisp-tender broccoli and toasted pumpkin seeds add a satisfying crunch.

If you have the time, make this recipe the night before. The extra time will allow the flavors to blend more thoroughly.

Why I Love This Broccoli and Bacon Salad

Bacon. Need I say more? I love bacon more than I love life. True story! If I could put bacon in everything, I would.

I love how all the flavors and textures come together to satisfy that need for crunchy and sweet while not worrying about falling off the keto diet or having to watch your carb count.

Preparing this broccoli and bacon salad the night before serving really is the best! It will be absolutely perfect the next day.

I also love that it’s made without mayonnaise. I’m not a huge fan of mayo and will only use it if I absolutely have to. It just makes my tummy icky.

What You Need to Make This Broccoli Salad Recipe

This broccoli and bacon salad will serve 4. Here is a list of the ingredients you need for the dressing and the salad.

Ingredients

  • Dressing:
  • 3/4 c. full-fat, non-flavored Greek yogurt
  • 1 T. honey* or one tiny pinch of Stevia powder
  • 2 T. fresh lemon juice
  • 1 T. fresh lemon zest
  • Salt and freshly ground black pepper, to taste.

  • Broccoli Salad:
  • ½ small red onion, outer skin removed and cut into thin slices
  • 2 large heads of fresh broccoli, tough stems removed, rinsed, and broken into florets
  • 6 slices bacon, cooked crispy and crumbled
  • ¼ c. fresh parsley, chopped
  • Salt and freshly ground black pepper to taste
  • 1/3 c. toasted pumpkin seeds, unsalted

How to Prepare Broccoli and Bacon Salad With Toasted Pumpkin Seeds

  1. To make the dressing, combine the Greek yogurt, honey (or Stevia), lemon juice, and zest in a small bowl. Season with salt and pepper to taste. Set aside.
  2. Add the broccoli florets to a large, microwave-safe dish and add 2-3 T. water. Cover and microwave on high for 4-5 minutes or until crisp-tender. (Check after 3 minutes and adjust cooking times accordingly.)
  3. Remove from microwave and drain excess liquid. Set aside, uncovered, and allow steamed florets to cool.

How to Store Leftover Broccoli Salad

If you follow me, you’ll know that I don’t like to leave leftovers in the fridge for more than 5 days. It’s simply a personal preference. The longer this sits in the fridge, the soggier the broccoli and bacon will get. Yuck!

I would not recommend freezing this.
