While most people prefer to enjoy soups on chilly afternoons, I say you can enjoy soup any time of the year, and trust me when I say you’re gonna love this thick and creamy broccoli cauliflower soup with bacon, any time!

The addition of bacon to this delightful soup just makes it all that much better.

Being on the keto diet can sometimes mean we don’t get to make or enjoy the soups we’ve grown accustomed to growing up, like chicken noodle, or creamy potato soup. But that doesn’t mean you can’t enjoy soup!!

This filling and tasty broccoli cauliflower soup is totally keto-friendly and is bursting with yumminess and flavor!

How to Make Broccoli Cauliflower Soup With Bacon

After trying this soup, you’ll be amazed that it’s low-carb and full of vitamins and nutrients. Here is a list of ingredients required for this cauliflower broccoli soup.

Ingredient list

  • 2 cups milk – for full flavor, you can choose regular milk, or for fewer calories, opt for 0% fat milk.
  • 1 cup chicken broth 
  • 1 cup vegetable broth
  • 1 cup heavy whipping cream
  • 1/4 cup flour – To make this keto-friendly, you can use almond or coconut flour, xantham gum, psyllium husk powder, but the taste will change slightly.
  • 1/4 cup butter 
  • 1/2 medium onion, diced 
  • 1/4 cup bacon (cooked and torn into bits)
  • 2 cups shredded cheddar cheese
  • 1 1/2 cups cauliflower – chopped 
  • 2 cups chopped broccoli 
  • salt and pepper to taste

Instructions to Make Broccoli and Cauliflower Soup

This soup is so easy to make. I bet my last dollar this won’t be the last time you make it!

  1.  Melt butter in a skillet over medium-high heat.  Add onions and cook under tender and translucent – about 3 minutes. 
  2. Mix 1/4 cup melted butter and flour together in a large saucepan over medium heat. Continue to stir until you get a thick paste.
  3. Add milk, whipping cream, chicken broth, and vegetable broth while continually stirring.      Continue to stir until the liquid thickens.
  4. Add Broccoli, chopped cauliflower, and onion to the mix. Stir well and let simmer on low for 15 minutes.
  5. Add shredded cheddar cheese and stir well.
  6. Salt and Pepper to taste 
  7. Garnish on top with bacon – ( or whatever you like best ) 
  8. Serve with crackers or bread.
  9. Enjoy!

What to Serve This Creamy Soup With

This is a great soup to eat on its own, but we all know that some soups are better with bread or crackers. If you are following a strict keto diet, regular bread or crackers are not an option. How to Store Cauliflower and Broccoli Soup With Bacon

You can safely store this in the fridge in an airtight container for up to 5 days. Honestly, I wouldn’t go any longer than that.

You can also store this in the freezer for up to 2 months. Thaw it out in the fridge the next day to serve that evening.

Variations For Keto Broccoli Cauliflower Soup

While this soup is keto-friendly (if you substitute regular flour), you can certainly add potatoes if you aren’t following keto strictly. Regular white potatoes or sweet potatoes will give this cauliflower and broccoli soup a different taste and texture.

If you do opt for potatoes, keep in mind the carb and nutritional values will change.

Not big on bacon? You can pass that up all together and simply sprinkle grated cheese on your soup.

If you want more nutrition in this soup, you can add chopped spinach or kale. I mean, why not?
