Chocolate Chaffles Stuffed with Pumpkin Cream

Chocolate and pumpkin together? Oh yeah, babe! I didn’t expect it, but the flavors were so incredible in these Chocolate Chaffles stuffed with Pumpkin Cream!

I modeled this recipe off of my Keto Red Velvet Whoopie Pie and man oh man I am craving it again now as I write up the recipe for y’all.

I wanted to flavor my regular cream cheese stuffing and thought, why not try pumpkin cream cheese? Or a pumpkin whipped cream? I blended the two concepts, and this incredible feeling was born. The pumpkin gives it such a soothing, warm, and comforting taste that I couldn’t stop eating it.

Pumpkin and chocolate belong together.

I used my Best Ever Chocolate Chaffle recipe to make these. They were the perfect base, nice, sturdy, and cake-like. This is the perfect autumn breakfast, tea-time snack, or dessert.

Pile them high and stick a candle in them to make an amazing (and pretty!) Chocolate Chaffles Cake for Halloween! I used fresh pumpkin to get the best flavor coming through in these, but use what you have.

Why I Love This Chocolate Chaffles Recipe With Pumpkin Cream

Honestly, what’s not to love about it? Chocolate, pumpkin cream, easy to make, ready in minutes. Need I say more?

I also love the versatility of this recipe. You can use whatever flavor of keto-friendly filling you want. Stuff it with cream, smear it with cream. Oh…I’m not drooling, you are.

What You Need to Make Chocolate Chaffles Stuffed with Pumpkin Cream

Here’s what you’ll need to make the chocolate chaffles:

  • two tbsp sugar-free cocoa powder (I used this one)
  • 1 tbsp almond flour
  • 1 tbsp erythritol
  • 1 tsp baking powder
  • pinch of pink salt
  • 1 oz cream cheese
  • 1 tbsp heavy cream
  • 3 large eggs
  • 1 tsp vanilla essence

I wanna remind you to try and use a blender for recipes that call for cream cheese because even softened, it often leaves lumps when mixed by hand, especially to make the pumpkin cream; you want this to have a smooth, creamy texture.

I used a handheld immersion blender to get everything combined. It makes life so much easier, especially because I really love these cream cheese chaffles and whipped cream recipes.

Pumpkin Cream Recipe

  • 1 oz cream cheese
  • 1 oz pumpkin puree (I use fresh, boiled pumpkin)
  • 4 tbsp heavy cream
  • 1 tsp vanilla extract
  • 1/2 tsp pumpkin pie spice

Blend it all together to get a nice thick, creamy pumpkin pie spice filling for your chocolate chaffle stack. It makes enough to slather in between a stack of three chaffles with a little on top. I topped mine with chopped walnuts and Keto Pancake Syrup.

How to Make Chocolate Chaffles With Pumpkin Cream Filling

  • Prepare your chaffles the way you normally would, then prepare the cream. (See the chocolate chaffles recipe here)
  • Now stuff your chaffles, smear the cream on top, dip your chaffles in the cream, you do you, babe!

Variations and Suggestions

Ooph, where do I begin?

As I mentioned earlier, you can use any cream or filling you want. A fruit filling would be the bomb with these chocolate chaffles.

You can add cinnamon to either the chaffles or the cream.

Feel free to add some yummy chopped nuts to the cream, too, if you want. You can basically dress this up to your heart’s desire.
