Who says you can’t drool-worthy desserts that just happened to be lower in carbs? I’m all for it, especially with this creamy chocolate chia mousse. Have it after lunch or dinner or as a mid-afternoon snack when you want something sweet and satisfying.

Chocolate Chia Mousse

I’d love to tell you that this chocolate chia mousse is 100% keto-friendly, but I’d be lying. While it is most certainly much lower in carbs than most regular desserts, it still has a slightly higher carb count than a keto dessert should have. But with that said, if you watch your carb count throughout the day, this treat should still be safe to enjoy guilt-free.

What you will need to make chocolate chia mousse

The beauty of this healthy dessert is that you don’t need a lot of ingredients or equipment.

There are two simple ways to make this chocolate chia mousse. The first way is to toss all ingredients in a blender and poof! Ready in minutes. The second way is to soak the chia seeds for at least 45 minutes before adding all the remaining ingredients to the mousse.

Step-by-Step Instructions

In a bowl, mix the chia seeds, almond milk, sweetener and cocoa powder.

Stir well until the ingredients are combined and set aside. In another smaller bowl, mix the chocolate chips with the coconut butter.

Microwave the mixture until the chocolate is melted, about 30-45 seconds.

Mix the chia mixture with the melted chocolate. Set aside until the chia seeds enlarge and the mixture thickens. This may take 30-40 minutes.

During this time, using a mixer, beat the coconut whipping cream.

How to make coconut whipped cream

Chill a can of good-quality coconut milk in the fridge overnight. In the morning, scoop it out into a bowl and, using a mixer, blend it until peaks form.

Spread the chocolate chia mousse in a glass or bowl, and add the coconut cream. Sprinkle with coconut flakes and finely chopped strawberries. Serve with additional strawberries.

Ingredients

  • 1 1/2 cup almond milk
  • 2 tablespoon chia seeds
  • 3 teaspoon Agave syrup or sugar-free sweetener
  • 1 1/2 tbsp cocoa powder
  • ½ cup sugar-free chocolate chips
  • 1 tbsp coconut butter
  • 1/3 cup coconut whipping cream see instructions on how to make coconut whipped cream
  • For garnish:
  • 1 tbps coconut flakes Use ready-to-use coconut flakes
  • strawberry
  • 1/2 tsp cocoa powder

Notes

If you use Agave syrup, the carb count will be much higher. You can use any liquid sweetener but if you’re trying to follow keto strictly, choose a sugar-free sweetener like Stevia or any other brand of your choice.
