Cinnamon Toast Crunch Cereal-Keto Friendly and Delicious!

I am in heaven after discovering how to make this keto cinnamon toast crunch cereal!

I already have a healthy obsession with salty, crunchy pork rinds. They make the perfect keto snack or side dish. But I had never thought to make it into cereal until I saw someone on Instagram make cinnamon pork rinds.

I tried it immediately and loved it. Then the next day I saw someone else on my timeline dump it into milk and I was mesmerized. Why didn’t I think of that?

So I took it to a whole other level because, of course, why not?

Why I Love This Cinnamon Toast Cereal

What’s great about using pork rinds to make Keto Cinnamon Toast Crunch cereal is that this is a protein-packed breakfast food (or dinner, let’s be real) especially if you add my keto granola to it!

You’ll get that recipe soon but it’s really just a mix of nuts, hemp seeds, other seeds and dried berries.

Then, I add in some Lakanto maple-flavored syrup in my almond milk and I am simply in heaven. I thought my cereal dreams were gone. Now I have this comfort food back in my life in such a healthier way!

What You Need to Make Cinnamon Toast Crunch Cereal

To make this, you’ll want to make a big batch of cinnamon pork rinds first so you can have keto cereal whenever you wish.

The first step is to brown the butter. OMG, this just ups the ante, as the butter becomes nutty and sweet on its own when you brown it. Then, you’ll make your caramel sauce, coat your smashed pork rinds in it, and store it in the fridge, ready to go.

You’ll need

Once you’ve made your cereal, then use a cup of it each time in a half cup of your favorite nut milk. I love it in some almond milk with a little maple-flavored syrup for extra sweetness.

How to Make Cinnamon Toast Crunch Cereal

  1. Brown the butter over medium-low heat
  2. Once the butter is nice and brown and toasty, add the heavy cream a little at a time to prevent curdling
  3. Add in the Lakanto sweetener, cinnamon, and sea salt
  4. Turn the heat off. Add in the pork rind pieces and toss to coat
  5. Transfer pork rinds to a baggie or bowl and place in the fridge to cool and caramelize.
  6. Use 1 cup in 1/2 cup of your favorite nut milk for your cereal

  • 1/2 cup Lakanto brown sugar
  • 4 cups pork rinds smashed into smaller pieces
  • 1 tbsp cinnamon
  • sea salt to taste

Instructions
