This chaffle recipe uses a balanced mixture of cream cheese, coconut flour and eggs. It makes a firm chaffle that is light enough in taste but dense enough to hold together a sandwich or heavy toppings.

When I make chaffles with coconut flour, I usually go for a sweeter flavor profile. However, if I’m in the mood for something savory, I’ll go with almond flour — such as in this recipe for cheddar cheese chaffles with almond flour.

Ingredients
- 4 ounces cream cheese softened
- 4 large eggs
- 4 tablespoons coconut flour
- 1 teaspoon baking powder
- 1 tablespoon melted butter
- 2 teaspoons vanilla
- 1 tablespoon keto sugar alternative, such as monkfruit sweetener
- 1 tablespoon sugar-free cocoa powder (if making a chocolate chaffle)

I used my Black and Decker waffle iron to make this chaffle. It gives me a full-sized waffle for a complete meal. You can top each piece individually or make two awesome slider type burgers or sandwiches with each half.

Tips to Make The Best Cream Cheese Chaffles
When working with cream cheese, you’ll want to use a food scale to portion out the correct amount of cheese. This is an excellent food scale that picks up every ounce and gram to help you track your macros.
Once you’ve measured out your cream cheese, soften it up in the microwave and then use a personal blender, hand mixer or food processor to get it all incorporated with the other ingredients.
It can be difficult to completely incorporate cream cheese into your chaffle recipe so I like to blend it out for a smoother texture. If you prefer the manual method, this handy upright semi-automatic whisk is a great tool to use. Bonus, it can also be used as a milk frother which you will appreciate if you make lattes.

Ingredients
- 4 ounces cream cheese softened
- 4 large eggs
- 4 tablespoons coconut flour
- 1 teaspoon baking powder
- 1 tablespoon melted butter
- 2 teaspoons vanilla extract
- 1 tablespoon monkfruit sweetener
- 1 tablespoon sugar-free cocoa powder
Instructions
- Preheat waffle iron according to instructions
- Combine eggs, cream cheese, and melted butter well, using a whisk or personal blender
- Add all other ingredients to mixture and combine well
- Add half of this batter to heated waffle iron, if using full-size iron. Use a smaller amount if using a mini waffle maker
- To remaining batter, add the optional ingredients to make sweet waffle.
