Creamed Spinach Using Cream Cheese

We first made creamed spinach using cream cheese when we made this stuffed pork chops recipe. The stuffing aka the creamy spinach was so delicious that we realized it could be a recipe on its own that you might want to make to serve with another meat dish. So we created this recipe for how you can transform this leafy green into a creamy, delicious side dish.

If you’ve made some of the other recipes here on this blog — beyond the aforementioned stuffed pork chops — chances are that you are familiar with creamed spinach ingredients. For instance, our low carb spinach artichoke dip uses both baby spinach and cream cheese. So does creamed spinach.

The recipe also calls for heavy cream, which is a mainstay in many of our low-carb creations, including sugar free whipped cream, Instant Pot creamy asparagus soup and even low-carb bread.

What I’m trying to say is that trying your hand at making creamed spinach, even if you’ve never made it before, shouldn’t be too challenging. These are all ingredients you should be familiar with in making various sugar-free and low-carb recipes.

You can easily use leftover spinach in other low-carb recipes, such as this spinach artichoke dip in the Crock Pot or a spinach and feta crustless quiche.

Ingredients

  • 2 tablespoons extra virgin olive oil
  • 10 cups baby spinach chopped
  • 1/4 cup heavy cream
  • 4 ounces cream cheese softened and cut into small chunks
  • 1/2 teaspoon garlic powder
  • sea salt and black pepper to taste

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Gradually add the spinach and sauté briefly just until it wilts. Continue until all of the spinach has been added and wilted down. Do not overcook.
  2. Add the heavy cream, cream cheese and garlic powder. Season with salt and black pepper, to taste, and stir to combine. Stir frequently until the cream cheese completely melts and the mixture is heated through.
  3. Remove from heat and serve immediately with your choice of main dishes. Enjoy!
