I love a good broccoli cheddar soup because it’s rich and flavorful yet so easy to make. All you need is four or five ingredients and a good blender, and you’re ready to go.

This keto soup is naturally gluten-free, made from healthy ingredients, and full of good fat to keep you fuller for longer. This is true soul food.

You can make this creamy or chunky. It’s up to you.

What You Need to Make Broccoli Cheese Soup

To make a chunkier keto broccoli cheese soup, use a handheld blender as I did in this recipe.

You’ll need these ingredients:

  • organic or homemade chicken broth
  • heavy cream
  • your favorite type of cheese, I used pepper jack cheddar cheese in this recipe
  • broccoli

Salt and pepper to taste. That’s it! I served it with some cool tomato slices topped with flaky pink salt, which was the perfect cool side dish to my comforting broccoli soup.

How to Make Keto Broccoli Cheese Soup

This is a super simple soup recipe, and I guarantee you’ll make it often.

  1. Bring your chicken broth to a boil.
  2. Add your broccoli and boil for 5 minutes, until broccoli is tender.
  3. Add your shredded cheese a little at a time to melt.
  4. Turn heat to medium-low, and add your heavy cream in quarter-cup increments to avoid curdling.
  5. Use an immersion blender to blend all ingredients to your liking.
  6. For a creamier soup, pour all ingredients into a regular blender.
  7. Allow simmering for another 5 minutes on low heat til the desired thickness is achieved.
  8. Top with extra cheese, and enjoy!

Tips for an Advanced Keto Broccoli Cheddar Soup

If you want to take this simple broccoli and cheese soup up a notch, try sauteeing freshly chopped garlic and onions in butter as your first step. Then add your chicken broth to this mixture and continue from there.

You can also add chopped rotisserie chicken into the soup after you’ve blended it for a heartier, meatier soup.

Finally, I love to add crispy bacon to my soup as a topping.

If your soup isn’t thickening, add one teaspoon of xanthan gum just before blending.

What to Serve With Keto Broccoli Cheese Soup

You can eat this on its own or serve it up with a nice fresh salad or even keto bread! Here are a few suggestions.

How to Store Broccoli Cheese Soup

If there are any leftovers, you can safely store this soup in an airtight container in the refrigerator for up to 5 days. I never store anything over that because I feel it loses its flavor, but that’s just me.

You can also safely store this keto broccoli cheese soup in the freezer for up to 2 months. It can be easily reheated on the stove.

Variations to Try

Not into broccoli? You can certainly make this with cauliflower. I mean, why not?

I’ve used cheddar cheese with this broccoli cheese soup recipe but feel free to use whatever cheese you like. Keep in mind that not all cheeses melt the same.

I would recommend mozzarella as my first choice. You can use mild cheddar or sharp/old cheddar for a more fuller flavor.
