Keto Cobb Salad with Ranch Dressing Using Greek Yogurt

Cobb salad is traditionally served with a vinaigrette dressing. However, in making this keto version of a cobb salad, I decided to put together a homemade ranch dressing using Greek yogurt. I think you’ll love how those flavors work together.

Keto Cobb Salad with Ranch Dressing Using Greek Yogurt

Cobb salad is traditionally served with a vinaigrette dressing. However, in making this keto version of a cobb salad, I decided to put together a homemade ranch dressing using Greek yogurt. I think you’ll love how those flavors work together.

There are a number of reasons I love this Keto Cobb Salad and why I think you will, too. One, this kind of salad is perfect for using up leftovers from other meals. For instance, this salad includes sliced hard boiled eggs as well as cooked bacon. Where did I get those ingredients? They were leftovers from making air fryer bacon as well as boiled eggs in the air fryer.

Another element where I can use leftovers is rotisserie chicken that maybe you brought home for Costco or even a baked chicken you might have served for dinner the night before. Any leftover chicken works here.

Overall, I love cobb salads because they’re huge, packed with lots of flavors and with so many protein-heavy ingredients, they keep me fuller, longer. This is the perfect salad to have for lunch on a busy day or when you want to pull together dinner fast from ingredients you already have in the refrigerator. Or you don’t want to cook on a summer evening but still want to make dinner at home. I’ve found that even kids love this salad, possibly because of all the cheese and crispy bacon pieces.

Ingredients

There are two elements to this salad for which you’ll require ingredients. First there is the homemade ranch dressing, which I love to make using Greek yogurt. I prefer Greek yogurt because it is higher in protein than other kinds of yogurt. The second part of the recipe ingredients is for the salad itself. Like I said, if you have leftovers from another meal that you can throw together for the cobb salad, all the better. That way you can get dinner on the table faster.

Ranch Dressing

  • 1/2 cup mayonnaise
  • 1/4 cup Greek yogurt
  • 1 1/2 tablespoons fresh chives chopped
  • 1 tablespoon fresh dill chopped
  • 1 tablespoon fresh parsley chopped
  • 1/4 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Pinch cayenne pepper
  • Sea salt and black pepper to taste
  • 1 teaspoon Worcestershire sauce
  • 1/4 cup buttermilk

Cobb Salad

  • 1 large head Romaine lettuce washed and chopped
  • 4 strips thick-cut bacon cooked crispy
  • 4 hard boiled eggs sliced
  • 3/4 pound rotisserie chicken breast sliced
  • 1 large avocado sliced
  • 1 medium cucumber peeled and cut into half-rounds
  • 3 ounces blue cheese
  • 1 tablespoon fresh chives chopped
  • 1 large lime cut into 8 wedges

Instructions

  • To prepare the ranch dressing, combine all the ingredients in a large bowl and whisk to combine. Taste and adjust seasonings as desired. Cover and refrigerate until ready to use.
  • To prepare the salad, make everything in one large bowl or, since this recipe has four servings, divide the Romaine lettuce among four serving bowls. Then top each bowl with equal amounts of bacon, hard boiled egg, chicken breast, avocado, cucumber and blue cheese. Top with the fresh chives and serve immediately with the ranch dressing and fresh lime wedges on the side. Enjoy!

Notes

The macros for this recipe is probably higher than you’re used to for a keto recipe. However, the nutritional information for this cobb salad includes the dressing, which has some higher carb ingredients, such as buttermilk. If you’re concerned about the net carbs, cut back on the amount of dressing you use.

If you don’t have Worcestershire sauce for making the dressing, you can use one of these Worcestershire sauce substitutes.
