  • 10 eggs
  • ¾ cup mushrooms, finely diced
  • 1 green bell pepper, finely diced
  • ¼ cup onion, finely diced
  • 1 beefsteak tomato, finely diced
  • ½ tsp garlic
  • ¼ tsp pepper
  • ¼ tsp salt
  • 1 tbsp chopped parsley (to top)

You’ll need a muffin tin and a whisk to scramble the eggs. That’s it! Oh, and, of course, your oven.

How to Make Keto Egg Bites With Veggies

These veggie egg bites are super simple to make. You’ll wonder why you never thought of this before!

  1. Preheat the oven to 350°F.
  2. Spray a muffin tin with cooking spray.
  3. Chop the vegetables into fine pieces, and divide evenly between 12 muffin tins.
  4. Chop the parsley and set aside.
  5. Add the eggs and seasonings to a bowl, and scramble with a whisk. Pour over the veggies.
  6. Transfer the muffin pan to the oven and bake on the middle rack for 20 minutes or until the eggs are done. 
  7. Remove from the oven, and top with chopped parsley.

Variations and Suggestions

The one thing I love about this keto egg bites recipe is that you can make it your own. If you’re not a big bell pepper fan, toss some spinach or chopped broccoli on them instead.

Want to add some meat to it? Perfect! Bacon bits would be absolutely divine on these, or ham or even chicken! The sky is the limit.

How to Store Keto Egg Bites With Veggies

You can store these safely in the fridge for a few days and pop them in the toaster oven to reheat them. Veggie egg bites can also be stored in the freezer for up to 3 months.

To reheat them, place the frozen egg bites in the microwave and reheat on 50% power for about 1-2 minutes or until heated through.
