We had a bowl full of avocados that were likely to ripen before we could use them all. The night before, we had used our air fryer for dinner, so it was still out on the counter. That’s when I had the idea: what if I breaded the avocados with almond flour and panko breadcrumbs — my favorite — and popped them into the air fryer? I did and it proved that avocados, something you might have only thought about using as a garnish in an open-faced omelet or another dish, can stand on their own as a low-carb snack or dinner side.

Ingredients

  • 2 avocados
  • 1/2 cup soy milk or dairy milk
  • 1/2 cup panko breadcrumbs
  • 1/4 cup almond flour
  • salt to taste
  • pepper to taste
Ingredients displayed include almond flour, soy milk, avocados, panko breadcrumbs, pepper, and salt, arranged on a gray surface.

Step-by-Step Instructions

Halve the avocados, remove the pits and peel. Slice each half into 8 wedges, depending on size, ensuring they’re thick enough to hold up during cooking.

Set up three separate bowls to create a dredging assembly line. Add flour to the first bowl, pour soy milk into the second bowl, and combine panko breadcrumbs with salt and pepper in the third bowl.

Begin by coating each avocado slice in the flour mixture, shaking off any excess. Next, dip it into the soy milk, ensuring full coverage. Finally, coat the avocado slice thoroughly with the panko breadcrumbs, pressing gently to ensure they adhere well.

Three steps to coat avocado slices: Step 1 - dipped in flour; Step 2 - dipped in liquid; Step 3 - coated with breadcrumbs.

Place the breaded avocado slices in a single layer in the air fryer basket. You don’t want any of them to overlap or they might not cook fully. Depending on the air fryer size, you may need to cook in batches. I have the Instant Pot Vortex Plus 6QT XL Air Fryer, which has a large, square basket. I was able to fit my entire batch in the basket at once. Cook at 400 F for 10-12 minutes or until golden brown and crispy.

Notes

To make these low carb air fryer avocado fries even lower in carbs you can swap out the panko breadcrumbs for grated parmesan cheese. That alone will save you about 6 grams of carbs per serving.

Make sure you don’t let your avocados get too ripe before making this recipe. The last time I made them, my avocados were perfect for making guacamole or mashing on top of toast. However, they were almost too soft to slice and, as I was going through the dredging process, a few started to fall apart.

When dredging the avocado slices, you can go through the three steps piece by piece instead of doing all the pieces at once.

Substitute soy milk for dairy milk? Now the recipe is vegan.

Substitute almond flour and regular panko breadcrumbs and use gluten-free panko instead? Now the recipe is gluten free.

Even though the recipe says salt to taste, I would go a little heavy handed on the salt. Maybe even add one-quarter or one-half teaspoon to the panko breadcrumbs mix to ensure the fries are salty enough.

If you forget to flip the avocado slices halfway through cooking, don’t worry about it. I’ve forgotten and they’ve still turned out great on both sides.
Even though the recipe says salt to taste, I would go a little heavy handed on the salt. Maybe even add one-quarter or one-half teaspoon to the panko breadcrumbs mix. The first time I made these, I just did a few shakes of the salt shaker, to taste. Trust me: it didn’t taste salty enough.
