Keep in mind that unlike deep-fried onion rings, these low carb onion rings are not whole pieces of onion. Instead, you are using a donut mold to craft chopped onions into something delicious that takes like traditional onion rings. Plus, because of the ingredients I’m using, you will get the satisfying crunch and flavor you crave while keeping your carb intake in check. Whether you eat them as an appetizer, side dish or party snack, these onion rings are sure to please.

Making these onion rings is ridiculously simple and you’ll be so happy about this that surely you’ll be making them often! These scrumptious onion rings will be ready to eat in under 20 minutes.

In this recipe, we’re cooking them in the oven. However, you can try them in the air fryer, too. Just invest in silicone donut molds for the air fryer and use them to make onion rings instead.

Equipment required

Silicone Baking Cups– In order to achieve a perfectly formed onion ring, you’ll need baking cups like these ones. Again, as I mentioned above, you can also buy donut molds that come in a four-pack and which could fit in your air fryer basket if you’d rather bake that way versus the oven.

  • 2 Onions – you can use white or yellow; remember, white onions are stronger and have fewer carbs than red onions.
  • 1 egg
  • Cheddar cheese – you can use your favorite cheese in this recipe
  • Almond flour – you can also use sesame flour
  • Black sesame seeds – to sprinkle on top
  • Salt and pepper

Instructions

Start by preheating the oven to 375 F. Grease the muffin molds with cooking spray. Silicone molds may be left un-greased.

Peel the onions and dice them into small cubes.

Place the onion filling in a mixing bowl. Add salt and pepper. Beat in the egg, and add the cheese. Mix well to ensure all ingredients are evenly combined. Add the almond flour and mix the mixture together.

Spread onion batter into molds, about two teaspoons per mold. Sprinkle the onion rings with sesame seeds.

Place the mold with muffins in the preheated oven.

Bake for about 15-20 minutes or until the onion rings are golden brown and crispy. Keep an eye on them to make sure they don’t overcook.

Remove the onion rings from the oven and let them cool for a few minutes.

Using a fork or silicone spatula, carefully remove them from the muffin molds. Serve the onion rings hot, ideally with a sauce, such as homemade mayonnaise, ranch dressing or ketchup.
