Make Ahead Keto Pancake Mix Recipe
In this batch of my lupin flour keto pancake mix, I add a little almond flour to the recipe for taste and texture. I also do a version with coconut flour that’s softer and just a tad sweeter. You can compare the macros for each and decide which you prefer. I just use whatever I have on hand. This is my go-to recipe for making low carb pancakes with lupin flour.

Here’s the mix to make yourself a large batch so you can whip some up whenever you like.
- 4 cups lupin flour
- 1 cup almond flour
- 1/2 cup your favorite keto sweetener
- 4 teaspoons baking powder
- 2 teaspoons xanthan gum
- 2 teaspoons pink salt
- 2 teaspoons cinnamon powder
You’ll need a large airtight canister to store this in. I use this 48oz jar as I’m slowly switching everything over to glass containers and away from plastic.
Mixing everything up like this makes it a breeze to simply scoop out a half cup, mix with milk, butter and eggs for delicious low carb, lupin flour pancakes. Don’t forget your sugar-free syrup!

Notes
This mix makes amazing lupin flour waffles, too! The texture is simply amazing. I know this blog covers many different chaffle recipes. But trying this mix with more traditional waffles is definitely worth doing.
Want an unexpected topping for your pancakes and waffles? Try a curd made from fresh fruit or fruit puree, such as lemon curd or mango curd. If the recipe calls for regular sugar, you can always swap 1:1 for monk fruit to keep the carbs in check.

Make-Ahead Keto Pancake Mix
Ingredients
- 4 cups lupin flour
- 1 cup almond flour
- 1/2 cup favorite keto sweetener
- 4 teaspoons baking powder
- 2 teaspoons xanthan gum
- 2 teaspoons pink salt
- 2 teaspoons cinnamon powder
Instructions
- Pour everything into a large (at least 6 cups) air-tight container and shake well to incorporate all the ingredients thoroughly.
- Use 1/4 cup of this mix with 1 tablespoon coconut oil, 1 egg and 2 tbsp milk of your choice to make 1 serving which is 2 medium-sized pancakes.
