Roast Beef Roll Ups with Horseradish Sauce

When you think about roast beef roll ups, you probably think about the appetizers that are sliced and made into spirals or pinwheels. Usually, these involve a tortilla but to keep this recipe, made with horseradish sauce, low carb, I’ve used slices of provolone in place of the bread.

Again, most people think of roll ups as something to serve as an appetizer. For me, the fan of lettuce wraps, such as cashew chicken lettuce wraps, or other non-traditional ways of making a sandwich, I love packing these roast beef and provolone cheese wraps for lunch. Pair with a green salad and a drizzle or olive oil and balsamic vinegar and you’ve got yourself a tasty lunch with very few net carbs. In fact, each serving has only 1 g net carbs.

This recipe is great for last-minute meals since all of the ingredients are store bought and you don’t have to cook, heat or bake anything. Keep what you need in the refrigerator so you can easily throw these roll ups together when you need lunch or dinner fast.

Ingredients

  • 15 provolone cheese slices
  • 1 cup arugula
  • 6 ounces roast beef sliced thinly
  • 1/4 cup horseradish sauce

Instructions

  1. Place provolone cheese slices on a clean work surface and divide the arugula and roast beef slices between them.
  2. Top each with a small drizzle of horseradish sauce before rolling the cheese around the filling. Secure each rollup with a toothpick. Enjoy!

Notes

If you don’t have roast beef on hand, you can use sliced turkey, ham or other lunch meat in its place. Additionally, if you don’t have or want to use provolone, you can substitute another kind of sliced cheese for the outside of these roll ups.
