How to Make Smashed Cucumber Salad

  • 1 lb. English cucumbers
  • ½ tsp salt
  • ½ tsp pepper
  • 4 oz feta cheese
  • 4 tbsp extra-virgin olive oil, divided
  • 2 tbsp fresh lemon juice
  • ¼ cup chopped roasted pistachios
  • ¼ cup finely chopped fresh dill
  • 2 tbsp mint leaves
  • 2 cloves of garlic grated

How to Make Smashed Cucumber Salad

This smashed cucumber salad recipe is so easy to whip up! Just a few simple steps, and you’ll be sitting at your table enjoying this wonderful salad.

Instructions

  • Slice the cucumbers crosswise into 3-inch long pieces. Cut each piece in half lengthwise and place on a cutting board cut side-down.
  • Lay the blade of a large knife flat on top of the cucumber piece and smash it down lightly with the help of your hand. slice diagonally into bite-size pieces

  • In a bowl, combine the feta, salt, pepper, 3 tbsp olive oil and lemon juice.
  • Add the feta dressing to the smashed cucumbers, along with pistachios, fresh chopped dill, mint leaves, and garlic.

How to Store Smashed Cucumber Salad

To be honest, I wouldn’t store this for longer than a day because of the pistachios in it. They will get soggy and gross, in my opinion. Just eat it all up in one day or share it with a friend, and you can both finish it in one sitting.

Variations to Try

Not a pistachio fan? I get it. These tiny little nuts aren’t for everyone. You can most certainly substitute sunflower seeds, pecans, or any other nut you prefer. Try to keep your nuts keto-friendly, though, and remember the carb count will differ slightly if you swap out the pistachios.

While this recipe does call for English cucumbers, I get that in some places they are a little more expensive than regular cucumbers so feel free to use regular if that’s what you prefer or have the budget for.

This salad is made with feta cheese, also a pricier cheese, so feel free to switch up the cheese too if you want. Any cheese will do!!
