Smoked Salmon Cucumber Roll
In my opinion, this recipe for smoked salmon cucumber roll is the perfect appetizer for holidays, family gatherings or anytime you want a refreshing, low-carb dish to serve for a party. There’s just something about the combination of fresh dill, capers, cream cheese and smoked salmon.

Cucumbers are the perfect vessel for this creamy delight because they’re so refreshing. Plus, when you roll up the cucumber, stuffed with cream cheese and salmon, it just looks so pretty and tastes so great. It’s an easy appetizer to make with just a few simple ingredients.
Plus, if you’re eating low carb or inviting people over who are, they’ll love the macros: this dish has 7g of protein and only 5g of net carbs per serving.
Ingredients
- 8 ounces cream cheese softened
- 1 teaspoon lemon zest preferably organic
- 2 teaspoons fresh lemon juice
- 2 tablespoons capers drained
- 3 tablespoons fresh dill chopped
- Sea salt and black pepper to taste
- 1 large seedless cucumber
- 2 ounces smoked salmon
Instructions
- In a large bowl, combine the cream cheese with the lemon zest, lemon juice, capers and fresh dill. Season with salt and black pepper, to taste, and stir to combine. Set aside.
- Chop the ends from the cucumber and thinly slice lengthwise with a julienne peeler.
- Spread one to two teaspoons of the cream cheese mixture along the length of each cucumber slice, adding an extra bit at the far end to help secure once rolled.
- Top with small pieces of smoked salmon and tightly roll the cucumber into a rollup. If necessary, use toothpicks to hold each appetizer together.
- Repeat with the remaining cucumber slices and filling. Serve immediately and enjoy!

Notes
I used those long, seedless English cucumbers to make this dish. They’re easier to work with than regular cucumbers. You can find them at your local supermarket. They’re often wrapped in plastic, which helps them last longer in the refrigerator.
You’ll have an easier time transforming the cucumbers into ribbons you can roll if you have the right tools. In this instance, I used this nifty little gadget called a julienne peeler. It makes thin, uniform slices a breeze. I find it works much better than a traditional vegetable peeler.
