Sweet Kale Chicken Salad

This Sweet Kale Chicken Salad recipe is bursting with fresh and nutritious ingredients. Easy to prepare, this vibrant salad is a symphony of flavors and textures! This fresh salad can be enjoyed for lunch or dinner or even if you are just craving a snack!

To make this salad keto-friendly, simply omit the apples and cranberries. If you do choose to use cranberries, keep it under a quarter of a cup. It’s also important to note that not all store-bought Poppyseed Dressings are keto. Make sure to read the labels.

I would recommend substituting the apples and cranberries for fresh strawberries! Yum!

What you need to make this delicious Kale Chicken Salad

No equipment is required except, of course, a salad bowl and a sharp knife to cut and chop all the ingredients! Oh, and you’ll also need a small skillet to cook up the kitchen.

Ingredients

  • 1 bag of Sweet Kale Chopped kit OR  (½ cup each Chopped Broccoli, Green Cabbage, Kale, Brussel sprouts, and Radicchio)
  • 2 Chicken Breasts diced
  • 1 Tablespoon Olive Oil
  • ½ tsp Salt
  • ¼ tsp Pepper
  • 1 diced apple (optional)
  • 1 Avocado diced
  • ¼ cup Dried Cranberries or craisins (also optional)
  • ¼ cup slightly chopped Walnuts
  • ¼ cup Pumpkin Seeds or Pepitas
  • 2 Tablespoons Poppyseed Dressing or to taste

How to Make Sweet Kale Chicken Salad

  1. Cut chicken breast into 1-inch pieces.
  2. To a medium size skillet, add 1 Tablespoon of Olive oil.
  3. Add uncooked chicken pieces and season with salt and pepper
  4. Cook over medium-high heat until cooked through and beginning to turn golden brown.
  5. Set chicken aside
  6. Dice apple into 1-inch cubes
  7. Cut and dice avocado into bite-size chunks

Layer greens, chicken, apples, avocado, walnuts, and cranberries. Top it off with your favorite Poppyseed dressing, and enjoy!!

It doesn’t get much easier than that.

How to Store Leftovers

You could store any leftover kale chicken salad in a glass container in the fridge, but I wouldn’t recommend keeping it longer than a day, even less time.

And besides, there shouldn’t be any leftovers of this scrumptious salad.

You can prepare the ingredients ahead of time and hold off adding the dressing to prevent wilting until you are ready to eat/serve it.
