Who says you can't drool-worthy desserts that just happened to be lower in carbs? I'm all for it, especially with this creamy chocolate chia mousse. Have it after lunch or dinner or as a mid-afternoon snack when you want something sweet and satisfying.

Ingredients
1 1/2cupalmond milk
2tablespoonchia seeds
3teaspoonAgave syrup or sugar-free sweetener
1 1/2tbspcocoa powder
½cupsugar-free chocolate chips
1tbspcoconut butter
1/3cupcoconut whipping creamsee instructions on how to make coconut whipped cream
Stir well until the ingredients are combined and set aside.
In another smaller bowl, mix the chocolate chips with the coconut butter.
Microwave until the chocolate is melted, about 30-45 seconds.
Mix the chia mixture with the melted chocolate. Mix well and set aside until the chia seeds enlarge and the mixture thickens. This may take 30-40 minutes.
During this time, using a mixer, beat the coconut cream.
Spread the cocoa chia mousse in a glass or bowl, and add the coconut cream. Sprinkle with coconut flakes and finely chopped strawberries.
Serve with additional strawberries.
Notes
If you use Agave syrup, the carb count will be much higher. You can use any liquid sweetener but if you're trying to follow keto strictly, choose a sugar-free sweetener like Stevia or any other brand of your choice.
