You may not always think of avocados as a low-carb food but with this recipe for air fryer avocado fries, you can make it work. This is a next-level snack akin to our recipe for zucchini fries. You can enjoy snacking on something that might remind your palate of fries but without all of the unnecessary carbs.
Halve the avocados, remove the pits and peel. Slice each half into 8 wedges, depending on size, ensuring they're thick enough to hold up during cooking.
Set up three separate bowls so you can have a dredging assembly line. Add flour to the first bowl. Pour the soy milk into another bowl. Combine the panko breadcrumbs with salt and pepper in a third bowl.
Start by coating each avocado slice in the flour mixture, shaking off excess.
Dip next into the soy milk, ensuring full coverage.
Finally, coat thoroughly with the panko breadcrumbs, pressing gently to adhere.
Place the breaded avocado slices in a single layer in the air fryer basket, avoiding overlap.
Cook at 400 F for 10-12 minutes or until golden brown and crispy, flipping halfway through the cooking time to ensure even crisping.

Make sure you don't let your avocados get too ripe before making this recipe. The last time I made them, my avocados were perfect for making guacamole or mashing on top of toast. However, they were almost too soft to slice and, as I was going through the dredging process, a few started to fall apart.When dredging the avocado slices, you can go through the three steps piece by piece instead of doing all the pieces at once.Substitute soy milk for dairy milk? Now the recipe is vegan.Substitute regular flour and regular panko breadcrumbs and use almond flour and gluten-free panko instead? Now the recipe is gluten free.If you forget to flip the avocado slices halfway through cooking, don't worry about it. I've forgotten and they've still turned out great on both sides.Even though the recipe says salt to taste, I would go a little heavy handed on the salt. Maybe even add one-quarter or one-half teaspoon to the panko breadcrumbs mix. The first time I made these, I just did a few shakes of the salt shaker, to taste. Trust me: it didn't taste salty enough.
