When you think about roast beef roll ups, you probably think about the appetizers that are sliced and made into spirals or pinwheels. Usually, these involve a tortilla but to keep this recipe, made with horseradish sauce, low carb, I've used slices of provolone in place of the bread.
Place provolone cheese slices on a clean work surface and divide the arugula and roast beef slices between them.
Top each with a small drizzle of horseradish sauce before rolling the cheese around the filling. Secure each rollup with a toothpick. Enjoy!

If you don't have roast beef on hand, you can use sliced turkey, ham or other lunch meat in its place. Additionally, if you don't have or want to use provolone, you can substitute another kind of sliced cheese for the outside of these roll ups.Of course, if you switch up the ingredients, then the nutritional information I've provided will not be accurate.
