I think that chocolate covered strawberries are one of life's delightful treats. But when you're watching carbs, you may think this treat is off limits. You would be wrong, especially if you can make them with sugar free chocolate chips as I've done here for these Sugar Free Chocolate Covered Strawberries.

Ingredients
16ouncesstrawberriesfresh
5ouncessugar free chocolate chips
2tablespoonscoconut oil

Instructions
Combine the chocolate chips and coconut oil in a microwave-safe bowl. Microwave for about two minutes or until melted. Whisk together until well combined.
Dip each strawberry in the melted chocolate, make sure to keep the green stems clean. Before the chocolate has a chance to harden, cover in sprinkles. You can do this by sprinkling them over the strawberries or you can put the sprinkles on parchment paper and then roll the strawberries in them.
Let the dipped and decorated strawberries rest on a wired tray. You'll want to put parchment paper underneath to catch the dripping chocolate.
Once you have dipped and decorated all of the strawberries, put them in the fridge to let the chocolate harden. Keep them in the fridge for at least 30 minutes.
When chocolate has hardened, enjoy.
Notes
If you're serving on a warm day, place the plate you have the strawberries on on top of a bowl of ice. You don't want the strawberries to get to room temperature and start to sweat and melt.Why do I recommend keeping the stems clean?
