Ingredients
2tablespoonsolive oil
1/2oniondiced
4garlic clovesminced

2poundsground beef
2small cans diced tomatoes
2tablespoonstomato paste
2cupswater
1teaspoonoregano
1teaspoonparsley
1teaspoonbasil
1teaspoonthyme
1teaspoongarlic powder
1teaspoononion powder
2teaspoonssalt
1/2teaspoonpepper
4cupsbaby spinach
Instructions
Heat olive oil in a large pot over medium heat. Add diced onion, minced garlic, and sauté until soft.
Add ground beef to the pot, cooking for 2-3 minutes until browned.
Stir in sliced mushrooms and cook for another minute.
Add the rest of the ingredients, except spinach, and stir to combine.
Let the sauce simmer on low-medium heat for 40 minutes, stirring occasionally.
Add spinach and stir until wilted. Let the sauce simmer for another 10 minutes.
Serve over zucchini noodles, pasta, or lasagna.
Notes
Ground beef can be swapped for ground turkey or pork.
Baby spinach can be substituted with Swiss chard or kale.
