These Greek salad skewers appetizer is basically a deconstructed Greek salad. I mean if you were to deconstruct one, what would you have? Well, beyond the lettuce and peppers, there would be cucumbers, black olives, tomatoes and feta cheese. Put it all on a stick and you've got a fresh, delicious appetizer.

Equipment
12 wooden skewers bamboo cocktail skewers or lollipop sticks could work, too.
Ingredients
1smallorganic cucumber
8ouncesfeta cheese
12grape tomatoes
12largeblack olivespitted
Instructions
Cut cucumber into 12 equally thick slices.
Dice feta cheese into 12 cubes.
Arrange cucumber slices on a serving platter and top each with a cube of Feta cheese.
Gently press the wooden skewer through the cheese and cucumber until secure. Add a tomato, followed by a black olive to top each skewer.
