Greek Salad Skewers Appetizer

This Greek salad skewers appetizer is basically a deconstructed Greek salad. I mean if you were to deconstruct one, what would you have? Well, beyond the lettuce and peppers, there would be cucumbers, black olives, tomatoes and feta cheese. Put it all on a stick and you’ve got a fresh, delicious appetizer.

I love using cucumbers in recipes that I want to keep as low carb as possible. That’s why cucumbers are key in this salmon roll up appetizer dish. Also, why I add cucumber to this low-carb creamy raspberry smoothie recipe.

As far as turning a Greek salad into a handheld appetizer, this makes so much sense when you want to bring something to a picnic or potluck beyond a regular salad. Or you want a different kind of appetizer to put out for holiday feasts.

When making this appetizer, I suggest buying grape tomatoes in a variety of colors. That way, when you assemble the skewers you can play with the different colors so that not only do you end up with a great tasting dish but also a great looking one, too.

Also, I’ve used black olives but also you can mix in kalamata olives. Use up any leftovers by making this easy olive salad recipe. It’s delish.

Ingredients

  • 1 small organic cucumber
  • 8 ounces feta cheese
  • 12 grape tomatoes
  • 12 large black olives pitted

Instructions

  1. Cut cucumber into 12 equally thick slices.
  2. Dice feta cheese into 12 cubes.
  3. Arrange cucumber slices on a serving platter and top each with a cube of Feta cheese.
  4. Gently press the wooden skewer through the cheese and cucumber until secure. Add a tomato, followed by a black olive to top each skewer.
