Equipment
Small saucepan
Blender
Whisk or spoon
Measuring cups
Two serving cups or glasses
Ingredients
10
strawberries
about 240g
1
cup
water
250 ml
1/2
teaspoon
stevia powder
4
tablespoons
gelatin
about 20g
Instructions
Add water, strawberries, and stevia to a pot and bring to a boil, then simmer for 10 minutes.
Blend the mixture for about 20 seconds until smooth.
Return the blended mixture to the pot and stir in gelatin over low heat until fully dissolved.
Pour into two cups, cool at room temperature for 2 hours, then refrigerate for at least 3 hours until set.
Serve plain or with whipped cream or adzuki paste.
Notes
You can adjust the sweetness by adding a little more or less stevia to taste.
Fresh strawberries work best, but thawed frozen strawberries can be used if needed.
Make sure the gelatin fully dissolves for the smoothest texture.
