It is also one of those recipes that makes people say, “Wait, you made that?” because it looks way fancier than the effort involved. Trust me, this one is very low stress and very forgiving, which is exactly how I like my keto desserts.

This is the kind of dessert I make on a slow weekend afternoon or when I know I will want something sweet after dinner without thinking too hard about it. It chills in the fridge while you go about your day, and later you get to enjoy a cool, jiggly treat that feels calm and a little nostalgic.   • water
  • teaspoon stevia powder
  • gelatin

How to Make Strawberry Jello

Start by adding the water, strawberries, and stevia powder to a small pot. Bring everything to a boil, then lower the heat and let it simmer gently for about 10 minutes. This helps soften the strawberries and lets their natural flavor come through. Do not stress if the strawberries look a little broken down. That is exactly what you want.

Once the strawberries are done simmering, carefully transfer everything into a blender. Blend for about 20 seconds until smooth. A standard blender works perfectly here, and this short blend keeps the flavor fresh without overworking it.

Pour the blended strawberry mixture back into the pot and place it over low heat. Add the gelatin and stir gently until it fully dissolves. This should only take a minute or two. Make sure there are no grainy bits left, because that is what gives you that smooth, classic jello texture.

Carefully pour the mixture into two cups or small serving glasses. Let them cool at room temperature for about 2 hours, then move them to the fridge to set for at least 3 hours. Once they are fully set, you are good to go. Serve as is or add a little topping if you are feeling fancy.

I love this strawberry jello topped with a small swirl of whipped cream for a creamy contrast. Sometimes I serve it plain as a light after-dinner treat, and other times I add a spoonful of adzuki paste if I want something a little extra. Storage Tips

Keep your strawberry jello covered in the fridge, and it will stay fresh for up to 3 days. This is a great recipe to make ahead if you know you will want a ready-to-go dessert later in the week. I do not recommend freezing it, as the texture can change once it thaws. Honestly, it is so easy to make that I usually just whip up a fresh batch.

Equipment

Ingredients

  • 10 strawberries about 240g
  • 1 cup water 250 ml
  • 1/2 teaspoon stevia powder
  • 4 tablespoons gelatin about 20g

Instructions

  • Add water, strawberries, and stevia to a pot and bring to a boil, then simmer for 10 minutes.
  • Blend the mixture for about 20 seconds until smooth.
  • Return the blended mixture to the pot and stir in gelatin over low heat until fully dissolved.
  • Pour into two cups, cool at room temperature for 2 hours, then refrigerate for at least 3 hours until set.
  • Serve plain or with whipped cream or adzuki paste.

Notes

  • You can adjust the sweetness by adding a little more or less stevia to taste.
  • Fresh strawberries work best, but thawed frozen strawberries can be used if needed.
  • Make sure the gelatin fully dissolves for the smoothest texture.
