Are Mushroom Keto Friendly

When you’re eating low carb or following a keto diet, you have lots of questions about which fruits, vegetables and other foods are lower in carbs. For example, many people have asked me if onions are keto friendly. Quick answer: some are. It’s the same with mushrooms. Whether you choose white mushrooms, shiitake, portobello or other varieties, all can work for keto. Let me explain why.

Are Mushrooms Keto Friendly?

Mushrooms are low in net carbs, good to know if you’re on a strict ketogenic diet or are just watching your carbs. For example, one cup of raw white mushrooms contains about 2 grams of carbohydrates. It also has about 1 gram of fiber. So, if you’re doing low-carb math, then you know that one cup of raw white mushrooms actually has 1 gram net carbs.

Most standard mushroom varieties, including white button, portobello, shiitake and oyster, fall within a similar carb range. There are two caveats to keep in mind.

One, canned mushrooms are also low in carbs but with a caveat: you need to be aware of any added ingredients or sauces they might be packed in. These additions could definitely increase the carb count.

And two, of the mushroom varieties, portobello and shiitake mushrooms are slightly higher in carbs than the others but still remain well within keto guidelines when eaten in reasonable portions.

How Mushrooms Compare to Other Keto Vegetables

When compared with other keto-friendly vegetables, mushrooms stand out for their extremely low carbohydrate content. For reference, mushrooms are comparable to most leafy greens, like spinach or lettuce, which is why they appear on my list of low carb vegetables. Typically, they contain about 1-2 grams of net carbs per cup. On the other hand, other lower carb veggies like zucchini and broccoli, have slightly more carbs per serving, at around average around 3-4 net grams per cup.

I mentioned earlier that portobello and shiitake mushrooms are the higher-carb version of low-carb mushrooms. As a comparison, while most mushrooms have about 1-2 net carbs per cup, portobello comes in at 2 net carbs and shiitake at about 3 net carbs. So right around what zucchini and broccoli are.

Some other low-carb and keto-friendly vegetables to compare against mushrooms include the following:

  • Spinach: 0.4 grams net carbs per cup.
  • Lettuce: 1.2 grams net carbs per cup.
  • Kale: 0.6 grams net carbs per cup.
  • Cauliflower: 3.2 grams net carbs per cup.

Best Types of Mushrooms and Preparation Methods for Keto

Mushrooms are usually low in carbohydrates and versatile in keto-friendly recipes. The way they are prepared and the specific type you choose can impact their suitability for a ketogenic diet. Just make sure you clean your fresh mushrooms properly before serving or cooking.

Canned Mushrooms Are Convenient

Canned mushrooms are convenient and typically low in net carbs, often containing under 2g net carbs per half-cup serving. Their sodium content is higher due to the canning process, so it’s best to rinse them before use.

When shopping, check labels for added sugars or undesirable preservatives, which sometimes appear in cheaper canned varieties. Plain canned mushrooms packed only in water and salt are your safest option. This way you can avoid any additives that would increase their carb count.

How to Saute Mushrooms So They Remain Keto

For keto, sauté mushrooms in butter, olive oil or avocado oil. Avoid thickeners, breadcrumbs or sauces that use flour or sugar. Add herbs, garlic or freshly shaved parmesan cheese for extra flavor without raising the carb count. Another option? Making mushrooms in the air fryer. Basically, by sticking to sautéing or roasting with herbs, spices and healthy fats, you can ensure that your mushroom dishes don’t blow your daily carb count.
