Grilled Bone-In Pork Chops
I love to make these Grilled Bone-In Pork Chops with an herb rub because it is super easy to make. Also, I find that pork is a meat that is very receptive to different seasonings, so using the rub really adds to the flavor.

I’ve kept this recipe very simple so you can adjust it to your liking. The herb rub is perfect for all seasons really but I love it in the summer for a fresh taste. Throw this on the grill at your next summer BBQ or, if you’re like our family that grills all year long, the next time you get bone-in pork chops on sale at the grocery store. Best of all, there is only 1 g net carbs per pork chop with this recipe.

Ingredients
- 2 tablespoons sea salt
- 6-8 large fresh basil leaves torn into pieces
- 2 sprigs fresh rosemary leaves only, crushed
- 2 tablespoons fresh thyme leaves crushed
- 3 large cloves garlic smashed, peeled and roughly chopped
- 1 tablespoon sea salt
- Olive oil or non-stick cooking spray for grill
- 4 bone-in pork chops approximately 1” thick
Instructions
- Combine sea salt, basil, rosemary, thyme, smashed garlic and Hawaiian black salt in a medium bowl and stir to combine. Set aside.
- Scrub grill grates with a wire brush and coat lightly with oil or non-stick cooking spray. Preheat grill to medium.
- Rub herb mixture over all sides of pork chops until coated. Place on the preheated grill and cook for 7-8 minutes, turning once halfway through. Keep the grill lid closed while cooking.
- Remove chops from the grill and brush off any remaining large chunks of the herb rub. Cover loosely and rest for 5 minutes before serving. Enjoy!
Notes

I like to grill fresh vegetables alongside these pork chops. Slice zucchini, brush with olive oil, season with salt and pepper and cook on the grill while the meat rests. These don’t take very long to cook.
You can make this recipe with boneless chops too but you want to watch the time very carefully and use thick-cut chops as these babies cook very quickly.
When you’re done with your bone-in pork chops, keep the bones. You can use them to make homemade bone broth.
Grilling pork chops is an entirely different experience than grilling red meat. While steaks can be charred on the outside and a delicious shade of pink or red inside, pork needs to be cooked uniformly throughout. Use a medium direct heat while grilling pork to achieve these results.
