Amazing Low Carb Cakes Made with Almond Flour
Everybody loves cake. I love me some cake, chocolate cake, cheesecake, carrot cake, strawberry shortcake, you name it I love it. And I love that I don’t have to give up cakes on the keto diet!
I’ve so far only made single serving mug cakes and my Lemon Blueberry Cake since being on the keto diet but I’ve been researching recipes to make other ketogenic cakes for the holidays and maybe for my little one’s birthday. These low carb cakes are made with almond flour mostly and wow I can’t wait to try some of them out.

Why almond flour? If you poke around enough recipes on this blog you’ll realize I’m an advocate for coconut flour over almond flour where possible. Almond flour has more calories and requires more per serving than coconut flour. It’s also more expensive.
However, for making cakes and bread, I will mix in almond flour with my coconut flour to get a firmer texture overall. Using only coconut flour in baking results in a dense texture. For a light and airy cake that holds up to being cut into slices, I’ve found that mixing the two flours work best.
So first up is this classic yellow cake recipe that I am considering for munchkin’s birthday. I love plain cake and this recipe seems simple enough.
