These wonderfully delicious no-bake mini cheesecake cups are quick to whip and will satisfy your craving for a sweet treat while keeping an eye on your carb count.

While this mini cheesecake recipe only serves one, that’s you, but you can easily double or triple the recipe to serve more.

This is a cottage cheese cheesecake recipe, so expect a creamy, smooth texture and light cheese taste.

What You Need to Make This Cottage Cheese Cheesecake Recipe

Equipment required

  • Serving cup – to enjoy your mini cheesecake cup in
  • measuring cup,
  • measuring spoons,
  • fork – to pat down the crumb bottom
  • immersion blender, blender, or food processor – to blend the cream filling

Ingredients

Crust:

  • ½ cup almond meal
  • 1 Tablespoon maple syrup (to keep this low-carb, use a liquid keto sweetener such as Splenda Liquid Sweetener)
  • 1 Tablespoon cashew butter

Cream filling:

  • ½ cup 2% cottage cheese
  • ½ cup plain 2% Greek yogurt
  • 2 Tablespoons maple syrup
  • 1 teaspoon vanilla bean paste

Suggested Toppings:

  • Blueberries,
  • Raspberries,
  • Strawberries,
  • Peaches,
  • Chopped Nuts,
  • Chia Seeds,
  • Hemp Seeds.

Directions:

  1. Combine Almond meal, maple syrup, and cashew butter with a fork until a nice crumb forms.
  2. Press the crumble into the bottom of a small jar or serving cup. Reserve about 1 Tablespoon for topping, if desired.
  3. Set aside.
  4. In a small bowl, combine cottage cheese, Greek yogurt, maple syrup, and vanilla.
  5. Using an immersion blend, blend until smooth. Alternatively, you can use a blender or food processor.
  6. Add the creamy mixture to the top of the crust.
  7. Add desired toppings, such as fruit and the remaining crumble mixture, and enjoy!

Note: This tastes even better if you allow it to refrigerate for several hours, but it is not necessary.
