White Fish in Foil Packets

The first time we ever cooked white fish in foil packets was after friends had caught fresh fish in Lake Michigan. They fired up the grill, loaded up the foil packet with fillets plus lots of veggies and a favorite way of cooking white fish was born.

Not surprisingly, I love white fish recipes because this type of fish fillet is so easy to prepare. This Foil-Pack White Fish with Roasted Tomatoes comes together in my favorite way, which is hands off. Even though I mentioned that you can cook fish in foil on the grill, you can also do it in the oven. All you need to do is prepare for a few minutes and then eat delicious food later.

I suggest that you make this fish dish along with roasted tomatoes, great if your garden has given you more tomatoes than you know what to do with. Sure, you can always freeze fresh tomatoes or use them to make gazpacho. But also you can roast them in the oven to serve with this fish dish or another protein of your choosing.

For this recipe I used cod because it’s what I had on hand. But you can use any kind of white fish. Not familiar with the different kinds or types of white fish? Here are some to consider:

  • Halibut
  • Flounder
  • Haddock

  • Sea bass
  • Dover sole
  • Rockfish
  • Seabass

We happen to live in Maine, along the seacoast, where we can get fresh fish from a fish market easily. However, when we lived in landlocked states, we found that the frozen fish varieties you could get from Costco — fresh or frozen — worked well for these recipes, too.

The best deal on a Costco Membership right now is through Groupon. When you sign up, you’ll get your one-year membership plus a $50 Costco Digital Shop Card for free. In case you didn’t know, the Costco Shop Card is the store’s gift card. You can use it in store or online.

Other warehouse club memberships

Perhaps you prefer to shop at another warehouse club because it is more convenient to where you live than Costco is. Good news: Both BJs and Sam’s Club have Groupon deals right now for memberships. Instructions for Roasted Tomatoes

Have a bounty of tomatoes this summer? Here’s how you roast them to bring out the sweetness and enjoy them as a side dish to this and your other favorite protein dishes. You can make this recipe using whole, heirloom tomatoes or smaller varieties you might grow, such as the grape tomatoes in a bucket shown here of the abundance of grape tomatoes we have from our backyard garden.

Oven-Roasted Tomato Directions

  1. Place the top oven rack in the center position and preheat the oven to 200 F.
  2. Line a large, rimmed baking sheet with parchment paper or a Silpat baking mat and set aside.
  3. Slice tomatoes into two-inch thick slices and place on the prepared baking sheet.
  4. Drizzle some extra virgin olive oil over the slices and sprinkle with salt and black pepper, to taste.
  5. Top with fresh thyme leaves, if desired, and place in the preheated oven for approximately two hours or until the tomatoes are nicely browned around the edges.
  6. Remove from the oven and use immediately or store in an airtight container covered with olive oil. Store unused tomatoes in the refrigerator for one to two weeks.

  • 24 ounces white fish fillets four fillets
  • 8 slices tomatoes or the equivalent in grape tomatoes sliced in half
  • 8 slices lemon
  • 2 tablespoons fresh thyme
  • 4 tablespoons unsalted butter
  • Sea salt and black pepper to taste

Instructions

  1. To prepare indoors, place top oven rack in the center position and preheat oven to 400 F. Tear off 4 sheets of aluminum foil into sections large enough to fold over fish fillets, with another couple of inches on each side to seal.
  2. Place one fillet slightly off center on each sheet of foil. Top or surround each fillet with tomatoes, lemon slices, one-half tablespoon fresh thyme leaves and one tablespoon unsalted butter. Lightly season with salt and black pepper, to taste.
  3. To seal the packet, fold aluminum foil in half over the fillets. Fold the 3 open sides, one at a time, over several times to seal the packet completely. The goal is to seal the packet tight enough to hold in the steam, but still allow enough room for the air to expand.
  4. Place the foil packets in the preheated oven for 10 minutes or place on hot grill over medium, direct heat for 8-10 minutes.
  5. Remove from the oven (or grill) and cool slightly before carefully opening the foil packets. Use caution, escaping steam will be very hot. Discard the lemon slices and serve immediately with your choice of sides. Enjoy!

Notes

If you don’t want to oven-dry the tomatoes before using, you don’t have to. Instead, slice them and any other vegetables you want to cook with the fish. Then line the foil packet with the veggies plus the fish fillet and cook on the grill or in the oven. Without oven-drying the tomatoes, they’ll just be a bit juicier as they cook so you might have extra liquid in the packet. To avoid soggy fish, you might want to open the top of the packet towards the end of your cooking time.

Foil packet cooking is the perfect cooking technique for white fish fillets on hot days when you don’t feel like being in the kitchen. You can make the packets and toss them on the grill to enjoy a light and healthy meal without a lot of fuss. At other times of the year, you can cook inside in the oven. Even better, clean-up is as easy as tossing the packets into the trash when you are done.
