We’re a house that loves eating leftovers. So whenever we make a recipe, we’ll usually make a bit more than what the recipe calls for so we will have food leftover. I love it when last night’s dinner becomes tomorrow’s lunch. With these 13 low-carb dinners, you’ll definitely want to have the leftovers for lunch the next day.

One of my favorite Chinese restaurant dish is egg rolls but the outer layer is a no-no for low-carb living. So I created this recipe for a low carb sausage egg roll in a bowl. Basically, it is all of the good stuff from inside the egg roll without the carb-laden wrapper. Heats up great as a leftovers lunch, too.

Keto Shrimp and Grits with Ground Lupin

When you make a keto version of shrimp and grits, you can’t use traditional grits because of their carb count. Grits are typically ground corn and therefore very high in carbs. So in this recipe I’ve used a substitute. It is ground lupin, also known as lupin meal, and it totally works.
