Easy and Delicious Keto Chicken Salad

I’ve started growing spinach in my garden so this simple Keto Chicken Salad has become a go-to of mine. I love how easily it comes together on days when I’m not in the mood to do lots of cooking.

Who doesn’t love a good chicken salad? Grab some leftover chicken or some rotisserie from the supermarket and save the heat for the winter. As the temps warm up and outside is calling our names, I offer you this light and delicious salad, no cooking necessary.

Why I Love This Keto Chicken Salad

I love that it all comes together in under 5 minutes. The only thing that might take time is if you are roasting the chicken yourself, but I prefer to buy it already made at the grocery store.

You can also substitute the spinach for regular lettuce if you aren’t fussy about spinach.

Keto Chicken Salad

To make this simple keto chicken salad, you’ll need:

  • ½ c. mayonnaise
  • 1 t. Dijon mustard
  • ¾ t. dried dill
  • Sea salt and black pepper, to taste
  • ¾ lbs. rotisserie chicken breast, shredded
  • 2 medium celery stalks, diced
  • 3 c. baby spinach
  • 3 oz. blue cheese, crumbled
  • ½ c. walnuts, chopped

How to Prepare Keto Chicken Salad

It doesn’t get much simpler than this. If it does, please let me know!

  1. Combine the mayo, Dijon mustard, and dried dill in a large bowl. Season with salt and black pepper to taste, and stir to combine.
  2. Add the shredded chicken breast and chopped celery to the bowl and toss to combine.
  3. Divide the baby spinach between 4 chilled serving plates.
  4. Add one-quarter of the chicken salad to each plate and top with some of the blue cheese and chopped walnuts.
  5. Serve immediately. Enjoy!

Variations and Suggestions

There are so many different ways to prepare this keto chicken salad. You do it any way you want.

Don’t like celery? Don’t add them. You can toss some onions in there if you wish, shredded carrots, whatever you like!

How to Store Chicken Salad

Make sure you store your chicken salad in an airtight container and not longer than 5 days. I have a 5-day rule in my fridge. Anything that’s been in there longer gets tossed. I don’t trust it.

I would advise against freezing any part of the chicken salad. Yuck!
