Low Carb Potato Substitutes

One of the foods I most miss in low carb living is the potato. Sweet potato, red potato, I don’t care. I miss them and especially making them in the air fryer. However, I’ve discovered that there are a number of root and other vegetables that are keto or low carb potato substitutes or alternatives.

If you’re looking to make a dish low-carb when you would normally use potatoes, here are a few alternatives to potatoes that you can use. Some of them already appear in the recipes on this blog.

Cauliflower

Cauliflower can be used as a substitute for potatoes in many dishes. You can roast cauliflower in the oven or the air fryer like you would You can also turn cauliflower into something that resembles mashed potatoes. I like to do that and then bake it as a cheesy cauliflower casserole. No one will ever know you’re not using potatoes.

Something you can’t do with potatoes but can with cauliflower: use a blender and turn it into rice. Then you can use that ingredient in a cauliflower fried rice or simply serve it as a side dish alternative to high-carb regular rice.

Turnips

Turnips can be used in place of potatoes and have a similar texture when roasted. They are also low in carbs and high in fiber. Try baking them in the oven or crisping them in the air fryer.

If you can get your hands on kohlrabi, a type of turnip, you’ll love it. I remember when we were doing a summer farm share through a CSA and received them in a box. I’d never tried them let alone heard of kohlrabi but ended up loving them so much. They are great cooked and mashed with butter, salt and pepper.

Radishes

Radishes are a great low-carb alternative to potatoes. You can slice and roast radishes in the same way as potatoes. They work because they have a similar texture as potatoes but also a slightly spicy, peppery flavor. It’s why we use them in our breakfast hash recipe.

Zucchini

Another low-carb alternative to potatoes is zucchini. And by zucchini I mean the low-carb vegetable that’s also known as summer squash. You can cut it into wedges and roast it with rosemary, garlic and olive oil. Or instead of potato French fries you can slice and bake it as crispy parmesan zucchini fries.

Eggplant

Eggplant grows like a literal weed in our backyard garden. It feels like as soon as we pick one another grows overnight. We grow both traditional eggplants and Asian eggplants — the latter are thinner and a lighter purple. When cutting into wedges and roasting in place of potatoes, we find the Asian eggplant works better. Also, they are great for using in a stir fry.

Celery Root

Celery root is a great low-carb and keto-friendly alternative to potatoes. It can be cut into wedges and roasted with rosemary and garlic. Also, you can use it as an ingredient in a cold salad such as this cobb salad.
