Lupin Flour Pancakes – Make-Ahead Keto Pancake Mix

I’ve been making lupin flour pancakes for some time now because they are super fluffy, delicious and only around 2g net carbs per serving of three pancakes!

I have no idea why I didn’t think to create my own make-ahead keto pancake mix but I finally did and now we have pancakes and waffles so much more because the mix is so convenient to use!

I whip these up after my workouts because thanks to the lupin flour, they’re packed with protein. If you’re unfamiliar with lupin flour, it is made from lupin beans which are more protein and fiber than anything else.

Thanks to the fiber content of lupin beans, a quarter cup of lupin flour has less than one net carb and 12g of protein. Yesss!

In this batch of my lupin flour keto pancake mix, I add a little almond flour to the recipe for taste and texture. I also do a version with coconut flour that’s softer and just a tad sweeter. You can compare the macros for each and decide which you prefer. I just use whatever I have on hand.

Make-Ahead Keto Pancake Mix

The recipe below gives you the amounts for 2 servings or 6-7 small waffles/pancakes. That’s what I usually make for myself and my munchkin. Yes, you can use this same batter for waffles!

Here’s the mix to make yourself a large batch so you can whip some up whenever you like:

  • 4 cups lupin flour
  • 1 cup almond flour
  • 1/2 cup your favorite keto sweetener, I used this one
  • 4 tsp baking powder
  • 2 tsp xanthan gum
  • 2 tsp pink salt
  • 2 tsp cinnamon powder

You’ll need a large airtight canister to store this in. I use this 48oz jar as I’m slowly switching everything over to glass containers and away from plastic that’s leaching into my food.

Mixing everything up like this makes it a breeze to simply scoop out a half cup, mix with milk, butter and eggs for delicious pancakes. Don’t forget your sugar-free syrup!

Ingredients

  • 4 cups lupin flour
  • 1 cup almond flour
  • 1/2 cup your favorite keto sweetener I used this one
  • 4 tsp baking powder
  • 2 tsp xanthan gum
  • 2 tsp pink salt
  • 2 tsp cinnamon powder

Instructions

  • Pour everything into a large (at least 6 cups) air-tight container and shake well to incorporate all the ingredients thoroughly.
  • Use 1/4 cup of this mix with 1 coconut oil, 1 egg and 2 tbsp milk of your choice to make 1 serving which is 2 medium-sized pancakes.

Lupin Flour Pancakes

To make your pancakes, I use half cup of the mix as per the recipe below. Keep in mind, this will make 6 small pancakes which I consider to be two servings.

If you’re making for yourself, you’ll only need a 1/4 cup with one egg, 2 tbsp milk and 1 tbsp coconut oil or melted butter.

Ingredients

  • 1/2 cup dry keto pancake mix recipe above
  • 2 eggs
  • 4 tbsp milk full-fat cows or nut milk
  • 2 tbsp melted butter or coconut oil
  • 2 tbsp olive oil optional, for frying

Instructions

  • In a small bowl, mix everything together thoroughly with a fork
  • Scoop spoonfuls of pancake batter in a heated skillet (medium-low flame) and cook for two minutes on each side or until golden brown and cooked through
  • serve with sugar-free syrup and your favorite toppings
