Peanut Butter Chaffle with Strawberry Jelly

Oooooh, yummy! Who doesn’t love peanut butter and jelly?! This peanut butter chaffle will be a hit with you AND your kids.

This sweet chaffle recipe is great because chaffles are super portable and meal preppable, which means you can make a big batch and have breakfast, lunch, and snacks for days! They’re also great additions to lunch boxes and snack bags for road trips.

What is a Chaffle?

What’s a chaffle? That’s the nickname that’s been given to waffles that are low carb, typically made simply with eggs and cheese. They’ve evolved completely since that first basic chaffle recipe to include a great many variations, some of which have no cheese involved.

These should then probably just be called keto waffles, but we’re sticking with chaffles, and I’m on a mission to try all the varieties I come across and dream up.

I love a good ketogenic waffle, and this peanut butter chaffle is so good! Make it over and over again in huge batches and top it with your favorite peanut butter pairings like maybe keto chocolate spread, maple syrup, berry compote, and whipped cream, or like I’ve done here with sugar-free strawberry jelly.

Feel free to use your favorite type of peanut butter, whether that’s crunchy or smooth. Just make sure it’s sugar-free. You can make your own peanut butter by processing organic peanuts in a good quality food processor like this one, or you can pick up all-natural, sugar-free peanut butter with only one ingredient: peanuts!

Hot tip: An immersion blender like this one is your best friend for whipping together natural peanut butter that has separated from the oil, making it smooth and spreadable once more.

Peanut Butter Chaffle Ingredients

To make your peanut butter chaffle, you’ll need the following ingredients and tools:

  • 1 egg
  • 2 tbsp all-natural peanut butter
  • 1 tbsp heavy cream
  • 1/2 tsp almond or vanilla extract
  • 1 tsp coconut flour
  • 1/4 tsp baking powder
  • sugar-free strawberry jelly (optional)

Equipment needed

You’ll also, of course, need a waffle maker. The above ingredients will give you two mini waffles on a mini Dash waffle maker, or you may want to double the ingredients to make 4 Belgian waffles in a Black and Decker Belgian Waffle Maker like I did here.

How to make peanut butter chaffles

It doesn’t get any easier than this:

  • Mix all ingredients together and add to the preheated waffle maker. Cook for 4 minutes or until there’s no more steam escaping from the sides of your waffle maker.
  • Top with sugar-free strawberry jam or your favorite topping, and enjoy!

Suggested toppings for peanut butter chaffles

Oh, the possibilities are endless. You can top these with any or all of your favorite things like:

  • jam/jelly/honey
  • strawberry compote (recipe here)
  • cinnamon
  • whipped cream
  • nutella (keto nutella, of course!)
  • nuts, shredded coconut
  • need I go on?

You put whatever topping you want on there just make sure it’s keto-friendly!

Is peanut butter keto-friendly?

Many still believe that peanuts and peanut butter aren’t keto-friendly. While they aren’t on the top of the list for keto recommended nuts, they still can be enjoyed in moderation.

It’s best to keep track of your daily carb intake to ensure you aren’t going over 50 grams.
