What makes this peanut butter chaffle recipe the perfect low-carb treat is the addition of sugar-free strawberry jam as a topping. Now you’ve got a dish that tastes like an old-fashioned peanut butter and jelly sandwich but without all of the carbs.

It is hardly the only topping to consider adding to these chaffles. Some other options include sugar-free hazelnut chocolate spread, maple syrup, blueberry compote or homemade sugar-free whipped cream.

Feel free to use your favorite type or brand of peanut butter, whether that’s crunchy or smooth. Just make sure it’s sugar-free.

Ingredients

  • 1 egg
  • 2 tablespoons all-natural peanut butter
  • 1 tablespoon heavy cream
  • 1/2 teaspoon almond or vanilla extract
  • 1 teaspoon coconut flour
  • 1/4 teaspoon baking powder

Instructions

  • Mix all of the peanut butter chaffle ingredients together and add to a preheated waffle maker.
  • Cook for four minutes or there’s no more steam escaping from the sides of your waffle maker.
  • Top with sugar-free strawberry jam or your favorite topping and enjoy!

Notes

To make any of the chaffle recipes on this blog, you’ll need a waffle maker. The above ingredients will give you two mini waffles on a mini Dash waffle maker. Another option is to double the ingredients to make four Belgian waffles in a Black and Decker Belgian Waffle Maker.
