To get the real dark chocolate flavor you seek, look for dark cocoa powder at the grocery store. It might even be listed as 100% dark cacao — cacao is the tree that gives you cocoa beans, which is how you make chocolate.

Last year I made chocolate nut clusters in my Crock Pot. That recipe was about 239 calories per serving and 19 grams of carbs. Even though this almond bark is a no-bake recipe, I’m going to try and recreate it in my slow cooker sooner. Because it has slightly fewer calories and more than half the same number of carbs, it is much better for low-carb snacking.

Ingredients

  • 1 stick salted butter melted
  • 1/2 cup dark cocoa powder
  • 1/2 cup coconut oil melted
  • 1/4 cup monk fruit
  • 1/4 cup heavy whipping cream
  • 1/2 cup sliced almonds
  • 1/4 teaspoon almond extract

Instructions

  • Mix all ingredients together, reserving some almonds to top with.
  • Pour into an 8-Inch Square Baking Dish. Add reserved almonds to top and freeze for at least one hour.
  • Break apart into roughly 12 pieces and keep in the freezer, taking out pieces as needed.
