Frozen Vanilla Yogurt Bites

When you’re eating low carb, getting froyo on a regular basis is probably off limits. But you don’t have to miss out on this warm-weather treat. These frozen vanilla yogurt bites are a treat you can make at home and enjoy without blowing your day’s carb count.

I love how versatile these berry-filled frozen yogurt bites can be. Because of their red, white and blue color, you can make these to bring to or serve at a patriotic holiday weekend barbecue or cookout. These are my low-carb go to dessert for Memorial Day weekend, July 4th or even a Labor Day cookout to celebrate — or mourn, as the case may be — the end of summer.

These are also a great snack to have in the freezer when you want something sweet. As you know, berries are some of the best low carb fruits. They’re even better when you add in frozen high-protein, low carb Greek yogurt. I love grabbing one or two of these from the freezer when I need to satisfy my sweet tooth.

Ingredients

  • 2 cups Greek yogurt, vanilla
  • 1/2 cup blueberries fresh or frozen
  • 1/2 cup strawberries sliced
  • 1/2 cup granola optional

Instructions

  1. Line a baking sheet with parchment paper for easy removal.
  2. In a mixing bowl, combine the Greek yogurt with the vanilla extract. if using plain yogurt. Mix well until smooth
  3. Using a spoon, drop 2-3 tablespoon dollops of the yogurt mixture onto the prepared baking sheet, spacing them apart.
  4. On each yogurt dollop, evenly distribute blueberries, sliced strawberries and a sprinkle of granola, if using granola.
  5. Place the baking sheet in the freezer and freeze for at least 2-4 hours or until the yogurt is fully frozen and firm.
  6. Once the yogurt bites are completely frozen, remove them from the freezer. Enjoy them immediately

Notes

To save on carbs, skip the granola topping. You’ll reduce the net carbs by 2 g per serving.

You can store these treats in an airtight container or freezer bag in the freezer for up to two weeks. If you leave them out and they start to thaw, do not refreeze. Instead, you can add them to a bowl and reinvent them as a Greek yogurt parfait.
