Low Carb Microwave Chocolate Mug Cake
Whenever I’m craving something sweet, my go-to fix is this low carb chocolate mug cake that you make in the microwave. Don’t know about mug cakes yet? Be prepared for me to blow your mind. They are the easiest desserts to make — ever.

Mug cakes take no more than 5 minutes to whip up and can be made in a variety of flavors depending on my mood. Of course, chocolate is my favorite. This recipe is in heavy rotation in my house and I bet it will be in yours too.

Instructions
In a 8 to 12 oz mug, add the flour, cocoa powder, baking powder, salt and sweetener. Mix until well combined. Then add the heavy cream, oil vanilla extract. Mix until well combined. Top with sugar-free chocolate chips. This is what the batter will look like before microwaving.

Put in the microwave for 1 minute and 45 seconds, or add a few more seconds, if the cake batter still seems too moist and wet. This is what your microwave cake should look like when it is fully baked.

Let cool for at least one minute. Top with homemade sugar free whipped cream.
Notes
The vegetable oil and heavy cream are crucial in this recipe to make your cake moist and delicious. What makes it sweet is the monk fruit sweetener or whichever no-sugar sweetener you choose to use.
You can use this recipe as your base for any low-carb mug cake. Just swap out the cocoa powder for another flavor. For instance, I’ve used banana flavoring for a banana cake and I’ve simply added cinnamon for a wonderful plain cake.
Top this delicious mug cake with homemade sugar free whipped cream or fresh strawberries, since berries are some of the best low carb fruits out there.
While this recipe is called a mug cake, I’ll often make it in a ramekin as well.
You can make this recipe using coconut flour but keep in mind that coconut flour has almost double the carbs of almond flour. That’s why I chose almond flour to keep the carbs down. However, if you cannot eat almond flour, by all means substitute coconut or another low-carb flour. But keep in mind that the nutritional information I’ve provided will not be accurate.
