There are so many reasons you’ll love making this low carb raspberry smoothie. There is its creamy texture and fruity goodness. Also, because I’ve added cucumber, it has a refreshing flavor. With the addition of protein powder, you can enjoy it as a guilt-free sweet dessert.

We know that raspberries — as well as other berries — are some of the best low-carb fruit you can eat. So, on a hot summer day when you need to cool off, you’ll be reaching for this recipe.

At other times of the year, you can transform this low carb raspberry smoothie into an almost ice cream sundae for yourself. Top with homemade sugar-free whipped cream, and you’ve got a dessert you’ll want to enjoy again and again.

Ingredients

  • 1/2 cup raspberries fresh or frozen
  • 1/3 cup heavy cream
  • 1 cup water
  • 1 tablespoon fresh lime juice
  • 1 scoop vanilla protein powder
  • 1 cup cucumbers peeled, cored and sliced
  • 8-10 large ice cubes
  • sugar-free whipped cream option for garnish

Directions

  • Combine all ingredients in a high-powered blender, such as a Ninja blender, and blend on high speed for 2-3 minutes or until thoroughly combined. Add additional water, if desired, to adjust consistency.
  • Pour into two glasses and garnish with a spoonful of whipped cream and additional raspberries, if desired. Serve immediately. Enjoy!

Notes

Of course, you can swap the raspberries for your favorite berry. I use blueberries all the time and strawberries can be used as well.

The cucumbers and ice cubes add a fresh spin to this smoothie so that it’s not too heavy like a milkshake. However, if you like that thicker consistency, you can use fewer ice cubes.
