It’s no secret that chaffles are my favorite keto thing. I’ve made quite a few chocolate chaffles already on this blog but this one right here? This is the best ever chocolate chaffle recipe. You’ve got to try it.

These are soft yet firm, not too sweet and with the perfect blend of cocoa powder to almond flour to give it just the right flavor. I also used cream cheese in this recipe because it’s my favorite cheese to use in sweet chaffle recipes. It gives off a nice texture that’s soft and pliable instead of a crunchy finish.

I finally bought a Dash Mini Waffle Maker to make my chaffles and holy cow why did I wait so long? It truly is the perfect little machine to give you cute little round waffles that are the perfect proportion every time. If you need help with portion control, get you one.

In fact, this is my second one as I bought a heart-shaped one to make cute cheesy heart-shaped waffles for my honey’s birthday. I will be buying a second regular round-shaped Dash Mini so that I can whip up a big batch when I need to because these waffles freeze very well. All you need to do is stick them in an air fryer to crisp right up without any sogginess.

Everyone has an air fryer by now, right?

Tips for the Best Chocolate Chaffle

For this recipe you’ll need:

  • two tbsp sugar-free cocoa powder (I used this one)
  • 1 tbsp almond flour
  • 1 tbsp erythritol
  • 1 tsp baking powder
  • pinch of pink salt
  • 1 oz cream cheese
  • 1 tbsp heavy cream
  • 3 large eggs
  • 1 tsp vanilla essence

I recommend placing everything in a blender or using a handheld emersion blender as I do for all my cream cheese chaffle recipes because even if you soften the cream cheese beforehand, it doesn’t like to play well and will be difficult to mix in completely.

The blender eliminates chunks of cream cheese in your waffle.

I also recommend placing these on a cooling rack for a few minutes when you remove them from the waffle iron. This gives them the opportunity to firm up without becoming soggy or limp since chaffles made with cream cheese are very soft and cake-like in texture.

Feel free to add sugar-free chocolate chips in these to make a delicious keto double chocolate chip waffle.

This recipe made 7 mini waffles for me, though there was overspill on my first two attempts so I’m sure you’ll be able to make 8 if you’re more careful. This gives you the perfect pairing to stuff them like my Red Velvet Whoopie Pie Chaffles.

Ingredients

  • two tbsp sugar-free cocoa powder
  • 1 tbsp almond flour
  • 1 tbsp erythritol
  • 1 tsp baking powder
  • pinch of pink salt
  • 1 oz cream cheese
  • 1 tbsp heavy cream
  • 3 large eggs
  • 1 tsp vanilla essence

Instructions

Preheat your waffle maker

Blend all ingredients together thoroughly

Pour a small amount in your waffle maker making sure there's no spill over

Cook for about two minutes or until steam stops escaping from the sides

Place on cooling rack for 5 minutes to cool and firm up
