Low Carb Strawberry Compote

Making a low carb strawberry compote is easier than you think. It’s a great way to create a topping that fits your lifestyle and works great with chaffles or keto French toast. You probably already have all of the ingredients you need in your pantry, freezer or refrigerator.

I’m called this low carb strawberry compote but really it is a sugar-free recipe. Just like the sugar free blueberry compote sauce but made with strawberries instead.

Like the blueberry compote, this strawberry version is very easy to make. All it took to do was take a cup of frozen strawberries and saute them in a pan with butter. Then add monk fruit sweetener, vanilla extract and lemon juice and, voila, compote. It’s perfect on keto egg loaf that I turn into French toast. Perfect breakfast or snack!

Ingredients for Strawberry Compote

  • 1 cup strawberries fresh or frozen
  • 2 tablespoons butter
  • 1/4 cup monkfruit sweetener
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • salt to taste

Compote versus fruit sauce

Compote is a simple fruit topping made by gently cooking fresh or frozen fruit with a bit of sweetener until the fruit softens and releases its natural juices. Unlike chunky fruit preserves or thick jams, compote stays saucy and is less sweet.

It is similar to fruit sauces and stewed fruit but usually chunkier and less sweet than jam or marmalade. It also resembles fruit chutneys but without the tangy spices or vinegar.

Notes

Pour it over your toasted egg loaf slices, French toast or pancakes.

Ingredients

  • 1 cup strawberries fresh or frozen
  • 2 tablespoons butter
  • 1/4 cup monkfruit sweetener
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • salt to taste

Instructions

  • Melt butter in the pan on medium heat.
  • Once the butter is melted, add the strawberries and the monkfruit sweetener and salt. Reduce the heat to simmer. You want the sauce to bubble and thicken as it simmers.
  • Add the lemon juice and vanilla extract. Stir to blend then remove the pan from the heat. Serve and enjoy.

Notes

Pour it over your toasted egg loaf slices, French toast or pancakes. You can even add some sugar free maple syrup if you want but I don’t think you’re going to need it.
